Blue Oyster
Blue Oyster (Pleurotus ostreatus)

One of our staple varieties, and one of the most versatile of all gourmet mushrooms. Its colors range from aqua to deep blue to grayish blue throughout its growing cycle.

Flavor
Savory, umami, reminiscent of dark meat. Great in any recipe which calls for oyster mushrooms. Used commonly on tacos, pizzas, soups and more.

 

Lion's Mane
Lion's Mane (Hericium erinaceus)

An extraordinary mushroom resembling a large brain with distinct lobes and tiny dangling teeth. Functions like seafood in the kitchen while supporting its consumers' brain, memory, and nervous system functioning. (1) (2)

Flavor
Tender, dense, and meaty with a mild seafood flavor. Can be used as an alternative to lobster or crab meat.

 

King Trumpet
King Trumpet (Pleurotus erygnii)

Impressively dense, large fungi with thick stalks perfect for grilling and unique applications such as faux "mushroom scallops". Its texture is very meaty and works as a great substitute for vegetarians.

Flavor
Buttery, firm, meaty, dense, with a mild seafood flavor. Can be used as an alternative to scallops or clams.

 

Italian Browns
Italian Browns (Pleurotus pulmonarius)

Easily our most umami variety of oyster mushrooms, with tan to deep brown-colored, wavy caps in overlapping clusters. Our personal favorite oyster mushroom for flavor.

Savory, tender, nutty, soft and richly umami; reminiscent of turkey gravy

 

Black Pearl
Black Pearl (Pleurotus sp.)

An elusive selection known as Shimofuri Hiratake in Japan; it's genetic expression and overall flavor lay somewhere between a blue oyster and a king trumpet with bold white stalks and black marbled caps.

Flavor
Umami, dense, mild, chewy yet tender, with a peppery finish.

 

Golden Oyster
Golden Oyster (Pleurotus citrinopileatus)

Marvelous clusters of vivid golden yellow caps. Highly aromatic with a sweet, fresh aroma reminiscent of licorice and watermelon rind.

Pink Oyster
Pink Oyster (Pleurotus djamor)

Delightful pink clusters of lovely umami tenderness. Compared to pork and chicken more than any of our other oyster varieties.

Snow Oyster
Snow Oyster (Pleurotus ostreatus)

Silky Snow Oysters - brilliant white, delicate clusters with densely packed, tender caps and minimal stalk.

Savory, umami, reminiscent of dark meat. Great in any recipe which calls for oyster mushrooms.

 

Coral Tooth
Coral Tooth (Hericium coralloides)

A wonder of fractal geometry and novel relative of Lions Mane with distinct branched structures consisting of tiny teeth. A novelty for any mushroom lover.

Earthy, peppery, sweet, absorbs flavors well

 

Chestnut
Chestnut (Pholiota adiposa)

Beautiful chestnut-brown to bright orange colored clusters with small to medium sized caps. Individual mushrooms are perfect to use whole as this species keeps its shape throughout cooking.

Nameko
Nameko (Pholiota nameko)

A rare to find fresh variety and relative of our Chestnut mushrooms, commonly used in Japanese cuisine from soups to stir-fries.

Nutty, sweet, fruity, umami, with a jelly-like texture on the caps

 

Pioppino
Pioppino (Cyclocybe aegerita)

Clusters of delicate, silky, velvety brown caps with a firm texture and flavor similar to chestnuts. Popular in pastas and risottos.

Maitake
Maitake (Grifola frondosa)

A treasure from the forest, also known as Hen of the Woods. Versatile in the kitchen with studies demonstrating immune support. Excellent for vegan and vegetarian dishes.

Shiitake
Shiitake (Lentinula edodes)

A classic, versatile variety elevated to its highest form of quality. Great for Asian-inspired dishes.

Reishi
Reishi (Ganoderma spp.)

A wonder of Eastern traditional medicine known as the "King of Herbs" and "Mushroom of Immortality", referring to its immune-supporting properties and a plethora of other reported benefits. Beautiful lacquered conks with colors ranging from brown to yellow to orange to maroon red.

Cordyceps
Cordyceps (Cordyceps militaris)

A highly revered, unique mushroom with energy and libido boosting properties reported by its users. Small orange spindles with an odor reminiscent of buttery popcorn when dried.
